Shrimp, Orange and Olive Salad with Sherry Vinaigrette

  1. Whisk first 5 ingredients in large bowl for dressing.
  2. Season to taste with salt and pepper.
  3. Cut peel and white pith from oranges.
  4. Quarter oranges lengthwise, than slice crosswise.
  5. Add oranges, shrimp and olives to dressing.
  6. Cover and refrigerate 1 hour.
  7. Add lettuces and green onions to dressing mixture and toss well.
