Baked Tater Skins Recipe
- Small Baking potato
- 1/4 c. Butter or possibly margarine
- 1/4 tsp Paprika
- 1 pch Pepper
- Preheat oven to 400 .
- Scrub potatoes, pat dry, and rub skins lightly with a little bit of butter.
- Pierce potatoes in several places with a fork.
- Bake potatoes till tender when pierced (about 45 min to 1 hour).
- When cold sufficient to handle, cut in halves lengthwise and scoop out potato, leaving a thin shell about 1/8 inch thick.
- Reserve potato for other dishs.
- Place skins on a baking sheet.
- Heat butter in a small pan with paprika and white pepper.
- Stir.
- Brush insides of potato skins with butter mix.
- Bake potato skins till crisp and golden brown (18 to 20 min).
- Extras: for variety, try adding grated cheese, crumbled bacon, green onion or possibly chives.
