Baked Tater Skins Recipe

  1. Preheat oven to 400 .
  2. Scrub potatoes, pat dry, and rub skins lightly with a little bit of butter.
  3. Pierce potatoes in several places with a fork.
  4. Bake potatoes till tender when pierced (about 45 min to 1 hour).
  5. When cold sufficient to handle, cut in halves lengthwise and scoop out potato, leaving a thin shell about 1/8 inch thick.
  6. Reserve potato for other dishs.
  7. Place skins on a baking sheet.
  8. Heat butter in a small pan with paprika and white pepper.
  9. Stir.
  10. Brush insides of potato skins with butter mix.
  11. Bake potato skins till crisp and golden brown (18 to 20 min).
  12. Extras: for variety, try adding grated cheese, crumbled bacon, green onion or possibly chives.
