Vegetable Pilaf

  1. Use non stick spray.
  2. Cook onion, add garlic and rice and cook for 2 minutes.
  3. Add vegetables, currants, bay leaf and water.
  4. Bring to a boil, then simmer covered for 30 minutes or until rice is cooked.
  5. Add soy sauce and cook covered for 5 minutes.
  6. remove bay leaf and serve.
