Vegetable Pilaf
- 1 onion, chopped
- 1 garlic clove
- 2 cups long grain brown rice
- 1 stalk celery
- 4 ounces green beans
- 4 ounces zucchini, chopped
- 4 ounces broccoli florets
- 1 green pepper
- 2 tablespoons currants
- 7 tablespoons light soy sauce or 7 tablespoons tamari
- 1 pint boiling water
- 1 bay leaf
- Use non stick spray.
- Cook onion, add garlic and rice and cook for 2 minutes.
- Add vegetables, currants, bay leaf and water.
- Bring to a boil, then simmer covered for 30 minutes or until rice is cooked.
- Add soy sauce and cook covered for 5 minutes.
- remove bay leaf and serve.
