Take Me to the Caribbean Shrimp Fajitas

  1. JERK SEASONING: Combine all ingredients and set aside.
  2. FAJITAS: Combine 3 Tablespoons of the jerk seasoning with 1 Tablespoon of water in a medium bowl.
  3. Add shrimp and toss to coat.
  4. Place in refrigerator for 1 hour prior to cooking.
  5. In a large nonstick skillet, heat olive oil over medium-high heat.
  6. Add onion and saute for 2 minutes, until softened.
  7. Add red pepper strips and continue to heat for 3-4 minutes.
  8. Add coated shrimp and seasoning mixture from bowl.
  9. Cover and cook for 8-10 minutes, stirring frequently.
  10. Remove from heat.
  11. Place 1/4 cup shrimp mixture into each tortilla and top with Pineapple Jalapeno Salsa (see my TastyKitchen recipe box) and avocado, if desired.
