Apple Apricot Compote Recipe
- 3/4 c. dry apricots
- 1 c. warm apple juice or possibly cider
- 1 x crisp green or possibly red apple, quartered, cored and diced
- 2 Tbsp. minced, toasted walnuts
- 1 Tbsp. cinnamon sugar
- 1/2 pt raspberries or possibly strawberries (optional)
- Soak dry apricots in warm juice overnight.
- In morning, drain, slice in half and place in mixing bowl.
- Add in apple and walnuts; toss to blend.
- Sprinkle with cinnamon sugar; toss to blend.
- Divide between two stemmed glasses.
- Spoon berries over each serving.
- Serve immediately.
- Serves 2
