Basmati Pilau Recipe
- 2 Tbsp. Vegetable oil
- 1 x Onion, minced
- 250 gm Basmati rice, soaked if wished (8oz)
- 1 x Cinnamon stick
- 2 x Cloves
- 1 x Bay leaf, crumbled
- 125 gm Cashew nuts, (4 ounce)
- 50 gm Sultanas, (2oz)
- 450 ml Water, about ( 3/4pint)
- 1 tsp Salt
- Heat the oil in a large frying pan over a medium-low heat and cook the onion for about 5 min, till soft.
- Add in the liquid removed rice, cinnamon, cloves, bay leaf, cashew nuts and sultanas, and stir-fry for 2 min over a medium heat.
- Add in the water to the pan with the salt.
- Cover tightly, turn the heat to low and simmer for 20 min, or possibly till all the water has been absorbed and the rice is tender and fluffy, adding a little extra water during cooking, if necessary.
