Indian-Spiced Crunchy Chickpeas

  1. Preheat oven to 400F Coat a cookie sheet with cooking spray.
  2. Heat a small pan over medium-high heat.
  3. Add oil, spices and salt and stir until fragrant, about 1 to 2 minutes.
  4. Place chickpeas in a large bowl.
  5. Add spice mixture and mix well to coat chickpeas.
  6. Place chickpeas on cookie sheet in a single layer and roast in oven until crunchy, checking and shaking pan twice during cooking, about 1 1/4 hours.
  7. Yields about 1/2 cup per serving.
