Beer Battered Catfish On Vinegar Slaw Recipe
- 1/3 c. all-purpose flour plus
- 2 Tbsp. all-purpose flour
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 1/3 c. flat beer Vegetable oil for frying
- 2 x catfish fillets - (4 to 6 ounce ea)
- 2 c. purchased coleslaw mix
- 2 Tbsp. white wine vinegar
- 1 1/2 Tbsp. honey
- 1 Tbsp. vegetable oil
- Whisk 1/3 c. flour, salt, and pepper in medium bowl to blend.
- Whisk in beer.
- Add in sufficient oil to heavy large skillet to reach depth of 1/2 inch.
- Heat oil to 350 degrees.
- Place remaining 2 Tbsp.
- flour on plate.
- Coat fish with flour.
- Dip in batter, letting excess drip off.
- Fry fish till golden and crisp, about 4 min per side.
- Drain fish on paper towels.
- Toss coleslaw mix, vinegar, honey, and 1 Tbsp.
- oil in medium bowl.
- Season with salt and pepper.
- Divide between plates.
- Place fish atop coleslaw.
- This recipe yields 2 servings.
- Comments: Make this a new version of Britain's fish and chips with (frzn) steak fries.
- Lemon tarts from the bakery would be good for dessert.
