Grandma Black's Red Cinnamon Apples

  1. Put sugar, water, red hots and food coloring in a large, deep pan over medium low heat to dissolve sugar.
  2. Stir occasionally.
  3. Peel and core the apples.
  4. My grandmother cut them in half, but they can also be left whole.
  5. Remove all seeds carefully.
  6. Rinse the apples.
  7. Place the apples in the pan and increase temperature to medium so it will come to a boil.
  8. Turn apples from time to time, so they cook evenly.
  9. Once they reach a boil, cook for approximately 30 minutes.
  10. The apples become brighter red as they cook.
  11. The texture and firmness change to a rather elastic sponginess.
  12. At this point, they are done.
  13. Place apples in a bowl.
  14. Cover with a few spoonfuls of syrup to keep them moist and colorful.
  15. Allow to cool before serving.
  16. Keeps several days in refrigerator in a covered container.
