Marinated Bell Peppers

  1. Roast the bell peppers until mostly black.
  2. Then set aside in a covered bowl to cool.
  3. Once cooled peel the skin off and discard along with core and seeds.
  4. Then cut into desired sized pieces.
  5. (I usually just pull apart the pepper into 1" strips}.
  6. Mince the garlic (use fresh garlic).
  7. Combine the cut peppers the garlic with enough olive oil to coat generously.
  8. Add salt and pepper to taste.
