Herring Roe New Year's Dish
- 200 grams Herring Roe (salted)
- 1 1/2 liter Water
- 1 tsp Salt
- 100 ml Dashi stock
- 1 tbsp Sake
- 2 tbsp Mirin
- 1 tbsp Soy sauce
- 5 grams Shaved Bonito
- Submerge the herring roe into lightly salted water.
- Soak for 1~2 days while occasionally changing out the water to release the salt.
- Add the marinade ingredients to a pot and turn on the heat.
- When it boils, remove from the heat and let cool.
- Dry the herring roe and marinade for several hours, then they're done.
