Apple Yogurt Compote

  1. Reserve half an apple for garnish.
  2. Peel, core, and thinly slice the remaining apples.
  3. Place the slices in a saucepan and sprinkle with the lemon juice as they are cut.
  4. Add the apple juice and sugar.
  5. Cook over medium heat, stirring until the liquid comes to a boil.
  6. Reduce the heat to medium-low and cover.
  7. Simmer, stirring occasionally with a wooden spoon, about 35 minutes, or until the apples are reduced to a sauce.
  8. Let cool slightly.
  9. Rub through a sieve to make a smooth puree.
  10. Divide the puree among four glasses.
  11. Top with the cream.
  12. Thinly slice the remaining apple and garnish the compotes with the apple slices.
  13. Serve warm or chilled.
