Chicken Quesadillas

  1. Preheat greased skillet if cooking on the stove.
  2. Lay one tortilla on a plate.
  3. Then add 1/4 of each of the ingredients.
  4. I rarely measure mine out.
  5. I just toss some filling ingredients on the tortilla in any order.
  6. Lay other tortilla on top.
  7. I usually smash mine down a bit if there is a pile in the center.
  8. You can cook these in a greased pan on the stove or in something like a sandwich maker.
  9. (I have a flat panini maker that cooks on top and bottom that works great.)
  10. Cook on med-high heat till one side turns brown.
  11. (about 2 minutes).
  12. Flip and cook the other side if using the pan method.
  13. Cut into triangles and serve.
  14. I use a pizza cutter to cut mine and it works great.
