Chicken Quesadillas
- 8 flour tortillas (Soft taco size)
- 2 cups cooked chicken (I usually use deli roast chicken)
- 1 12 cups colby or 1 12 cups monterey jack cheese
- 1 cup pace medium salsa
- 12 cup sour cream
- Preheat greased skillet if cooking on the stove.
- Lay one tortilla on a plate.
- Then add 1/4 of each of the ingredients.
- I rarely measure mine out.
- I just toss some filling ingredients on the tortilla in any order.
- Lay other tortilla on top.
- I usually smash mine down a bit if there is a pile in the center.
- You can cook these in a greased pan on the stove or in something like a sandwich maker.
- (I have a flat panini maker that cooks on top and bottom that works great.)
- Cook on med-high heat till one side turns brown.
- (about 2 minutes).
- Flip and cook the other side if using the pan method.
- Cut into triangles and serve.
- I use a pizza cutter to cut mine and it works great.
