Berry Pancake (Waukau)

  1. Adjust oven rack to the lower-middle position and heat the oven to 375 degrees.
  2. Whisk the flour and salt in a medium bowl.
  3. Whisk the milk, egg, and vanilla in a small bowl.
  4. Make a well in the center of the flour mixture and add the milk mixture to the well.
  5. Whisk until combined (a few small lumps may remain).
  6. Melt the butter in a 12-inch ovenproof skillet over medium heat.
  7. Pour the batter into the center of the skillet and let it level.
  8. Scatter the berries over the batter, leaving a 1-inch border around the edges.
  9. Sprinkle the sugar over the berries, again avoiding the outer 1-inch border.
  10. Bake until the edges are puffed and deep golden brown, 50 to 60 minutes.
  11. Transfer to a serving plate and serve hot.
