Mint and Pomegranate Raita (Anar Ka Raita)
- 1/4 cups Mint Leaves
- 1/4 cups Coriander Leaves
- 4 cloves Garlic
- 2 Green Chilies
- 2 cups Thick Yogurt
- 1/4 cups Water Or As Needed
- Salt To Taste
- 1 teaspoon Cumin Powder
- 1 teaspoon Chaat Masala
- 1 Tablespoon Sugar
- 1 cup Pomegranate Arils
- Blend together mint, coriander, garlic and green chillies in a mixer using a tablespoon or so of water, until mixture is a chutney-like paste.
- Transfer the paste to a bowl and set aside.
- In another bowl, whisk yogurt using a wire whisk.
- Add 1/4 cup or so of water to get the desired consistency.
- Whisk well to ensure that no thick lumps remain.
- Add the salt, cumin powder, chaat masala and sugar to the yogurt, and whisk it all together until well combined.
- Add the mint paste to the yogurt.
- Stir gently to combine.
- Taste and adjust the seasoning accordingly.
- When ready to serve the raita, add pomegranate arils and stir to combine evenly.
- Serve chilled or at room temperature.
