Drop Scones

  1. Mix flour and salt together.
  2. Rub in margarine with fingertips.
  3. Add sugar, and stir.
  4. Add beaten egg and milk to make a smooth batter.
  5. Pour a little oil on a well-greased griddle or frying pan.
  6. (Mum's note: Pan needs to be pretty damned hot.)
  7. Drop three separate spoonfuls in at a time.
  8. Leave until bubbles pop on the surface and then turn over and cook till brown on bottom.
  9. When done, place in a clean dish towel and cover till all have been cooked.
  10. (Mum's note: Not sure why we need to do this, but that is the way I was shown.)
  11. Cool, then butter them (liberally) as you serve them.
