Seafoam Cantaloupe Pie Recipe
- 1 env. (1 tbsp.) unflavored gelatin
- 1/2 c. sugar
- 1/4 teaspoon salt
- 4 slightly beaten egg yolks
- 1/2 c. lime juice
- 1/4 c. water
- 1 teaspoon grated lime peel
- Few drops green food coloring
- 4 egg whites
- 1/2 c. sugar
- 1/2 c. whipping cream, whipped
- 1 1/2 c. cantaloupe balls
- 1 baked (9 inch) pie shell
- Combine gelatin, 1/2 c. sugar and salt.
- Stir together egg yolks, lime juice and water.
- Add in to gelatin mix.
- Cook and stir over medium heat just till mix comes to a boil.
- Remove from heat.
- Add in lime peel and food coloring.
- Chill, stirring occasionally till mix mounds.
- Beat egg whites to soft peaks, gradually add in 1/2 c. sugar; beat to stiff peaks.
- Mix in gelatin mix.
- Mix in whipped cream and cantaloupe.
- Pour into cooled pie shell.
- Refrigeratetill hard.
- Top with a wreath of additional whipped cream and toasted coconut.
