Seafoam Cantaloupe Pie Recipe

  1. Combine gelatin, 1/2 c. sugar and salt.
  2. Stir together egg yolks, lime juice and water.
  3. Add in to gelatin mix.
  4. Cook and stir over medium heat just till mix comes to a boil.
  5. Remove from heat.
  6. Add in lime peel and food coloring.
  7. Chill, stirring occasionally till mix mounds.
  8. Beat egg whites to soft peaks, gradually add in 1/2 c. sugar; beat to stiff peaks.
  9. Mix in gelatin mix.
  10. Mix in whipped cream and cantaloupe.
  11. Pour into cooled pie shell.
  12. Refrigeratetill hard.
  13. Top with a wreath of additional whipped cream and toasted coconut.
