Calabacita Salad

  1. Combine corn and water in a medium saucepan.
  2. Bring to a boil.
  3. Cover and reduce heat and simmer 7 to 8 min.
  4. or just until corn is tender.
  5. Drain and set aside.
  6. Cut zucchini into 1/4 in.
  7. slices; cut each slice into fourths.
  8. Add zucchini and remaining ingredients to reserved corn.
  9. Toss gently to combine.
  10. Cover and chill several hours.
