Spinach, Radicchio & Grapefruit Salad
- 6 cups Baby Spinach, washed and dried
- 12 head radicchio, washed and dried
- 2 large pink grapefruit, peeled and sliced, 3 Tbsp. of their juices reserved
- 1 tablespoon balsamic vinegar
- 14 cup extra virgin olive oil
- salt and pepper
- Divide the spinach, radicchio and grapefruit slices among four plates.
- Whisk together the grapefruit juice, vinegar and oil.
- Season with salt and pepper.
- Drizzle the dressng over the salad and serve.
- Serves 4.
