Spinach, Radicchio & Grapefruit Salad

• 6 cups Baby Spinach, washed and dried
• 12 head radicchio, washed and dried
• 2 large pink grapefruit, peeled and sliced, 3 Tbsp. of their juices reserved
• 1 tablespoon balsamic vinegar
• 14 cup extra virgin olive oil
• salt and pepper

1. Divide the spinach, radicchio and grapefruit slices among four plates.
2. Whisk together the grapefruit juice, vinegar and oil.
3. Season with salt and pepper.
4. Drizzle the dressng over the salad and serve.
5. Serves 4.
