Sweet Potato & Pancetta Pizzas

  1. Place sweet potato into bowl with a splash of water, cover and cook on high for 2 minutes, until tender.
  2. Spread tomato paste over each pita pocket and top with sweet potato, Philly*, tomatoes, pancetta and thyme.
  3. Place onto an oven tray, and drizzle with oil.
  4. Bake at 180C fan-forced for 10 - 12 minutes until base is crispy and pizza is heated through.
