Sweet Potato & Pancetta Pizzas
- 250g sweet potato, peeled, thinly sliced Safeway 2 pkg For $5.00 thru 02/09
- 4 small oval pita pockets
- 2 tablespoons tomato paste
- 125g block PHILADELPHIA Cream Cheese, softened, cut into small pieces
- 1/3 cup semi dried tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 4 slices pancetta, sliced
- 1 tablespoon fresh thyme leaves
- 2 teaspoons oil
- Place sweet potato into bowl with a splash of water, cover and cook on high for 2 minutes, until tender.
- Spread tomato paste over each pita pocket and top with sweet potato, Philly*, tomatoes, pancetta and thyme.
- Place onto an oven tray, and drizzle with oil.
- Bake at 180C fan-forced for 10 - 12 minutes until base is crispy and pizza is heated through.
