Aunt Laura's Oklahoma Soup
- 1 12 lbs ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) can tomato soup
- 1 (15 ounce) can ranch style beans
- 1 (10 ounce) can vegetable soup
- 2 (15 ounce) cans mixed vegetables, drained
- 1 (10 ounce) can Ro-Tel tomatoes
- 2 cups water
- chili powder, to taste
- pepper, to taste
- In a large skillet, brown ground beef with onions and garlic.
- Drain meat mixture on paper towels.
- To a large stock pot, add meat, tomato soup, Ranch Style beans, vegetable soup, mixed vegetables, Ro-Tel tomatoes and water.
- Bring to a boil and add chili powder and pepper to season.
- Reduce heat and let simmer about 30 minutes.
- ~NOTE~Fresh or frozen vegetables may be used instead of canned.
