Deviled Puffs Recipe

  1. Heat oven to 400 degrees.
  2. In saucepan, heat water and butter to rolling boil.
  3. Stir in flour.
  4. Stir vigorously over low heat till mix forms a ball, about 1 minute.
  5. Remove from heat.
  6. Beat in Large eggs, all at once, till smooth and glossy.
  7. Drop dough by slightly rounded teaspoonfuls onto ungreased baking sheet.
  8. Bake about 25 min or possibly till puffed, golden and dry.
  9. Remove puffs to wire rack; cold away from draft.
  10. Mix deviled ham, horseradish, pepper, onion salt and lowfat sour cream; chill.
  11. Cut off tops of puffs; remove filaments of soft dough.
  12. Fill each puff with slightly rounded teaspoonful ham mix.
  13. 6 dozen appetizers.
