Lemon Shortbread
- 180 grams White flour
- 100 grams Butter
- 50 grams Sugar
- 1 tbsp Lemon juice
- Return the butter to room temperature and mix in the sugar.
- Whisk the two together until the mixture becomes white and fluffy, then add lemon juice.
- Cut in the flour with a spatula, then bring it all together into one ball of dough.
- Shape the dough, cut into squares and pierce with a fork.
- Bake for 17-20 minutes at 160C (320F).
- Using a fork is an easy way to dock and pattern the dough.
