Cornmeal Crusted Cod Sandwiches with Old Bay Tartar Sauce
- 1 cup Mayonnaise (Homemade Or Store Bought)
- 2 Tablespoons Sweet Pickle Relish
- 1 Tablespoon Grainy Dijon Mustard
- 1 Tablespoon Chopped Pickled Jalapenos
- 1 Tablespoon Freshly Squeezed Lemon Juice
- 2 teaspoons Old Bay Seasoning
- 1/2 teaspoons Dried Terragon (or 1 Tablespoon Fresh)
- Kosher Salt And Black Pepper To Taste
- 1 cup Yellow Cornmeal
- 1 teaspoon Old Bay Seasoning
- 1/4 teaspoons Ground Black Pepper
- 1 pound (give Or Take) Fresh Cod Fillets
- 1/4 cups Grapeseed Or Light Olive Oil, For Pan Frying
- 6 whole Hamburger Buns
- Sliced Fresh Tomato
- Torn Romaine Lettuce
- For the Old Bay tartar sauce: Combine all the ingredients except the salt and pepper in a bowl.
- Stir and season with kosher salt and black pepper to taste.
- Refrigerate until ready to use.

- For the sandwiches: Combine the cornmeal with the Old Bay and black pepper.
- Cut the fresh cod into equal pieces and dredge in cornmeal, pressing so it sticks to the fish.
- Heat a large non-stick pan over medium heat and add oil.
- Cook a couple of pieces of fish at a time for about 2-3 minutes per side until fully cooked and flakes easily.
- Spread a little of the tartar sauce on the bottom half of the hamburger bun, top with 2 pieces of cod.
- Top that with fresh sliced tomato, lettuce and the other half of the bun.
