Cornmeal Crusted Cod Sandwiches with Old Bay Tartar Sauce

  1. For the Old Bay tartar sauce: Combine all the ingredients except the salt and pepper in a bowl.
  2. Stir and season with kosher salt and black pepper to taste.
  3. Refrigerate until ready to use.
  4. Use any leftover tartar as a dip for chips, french fries or onion rings (yum!

  6. For the sandwiches: Combine the cornmeal with the Old Bay and black pepper.
  7. Cut the fresh cod into equal pieces and dredge in cornmeal, pressing so it sticks to the fish.
  8. Heat a large non-stick pan over medium heat and add oil.
  9. Cook a couple of pieces of fish at a time for about 2-3 minutes per side until fully cooked and flakes easily.
  10. Spread a little of the tartar sauce on the bottom half of the hamburger bun, top with 2 pieces of cod.
  11. Top that with fresh sliced tomato, lettuce and the other half of the bun.
