Honey-Ginger Baked Salmon with Jasmine Rice

  1. Prepare rice according to package directions.
  2. Heat oven to 375 degrees .
  3. In a small bowl combine orange juice, soy sauce, honey, garlic and ginger.
  4. Reserve 2/3 cup marinade.
  5. Place remaining marinade and salmon fillets into a plastic zippered bag and refrigerate for 15 minutes.
  6. Remove salmon from marinade, place on aluminum foil-lined baking pan and bake for 20 minutes.
  7. Meanwhile, add 2/3 cup reserved marinade to small saucepan and simmer over medium-high heat for 5 minutes or until syrupy
  8. Heat oil in a medium skillet over medium heat.
  9. Saute red bell pepper 2 minutes.
  10. Add peppers to cooked rice.
  11. Remove salmon from oven and serve over rice.
  12. Top with sauce and garnish with green onions.
