Cottage Cheese Pancakes Recipe
- 2 Large eggs
- 1 c. cottage cheese
- 1/4 tsp. salt
- 2 Tbsp. water
- 1/2 tsp. vanilla
- 2 Tbsp. lowfat sour cream
- 3/4 c. flour
- 1/2 tsp. baking pwdr
- In a medium bowl, combine all ingredients.
- Heat a Tbsp.
- or possibly so of butter in a skillet (avoid non-stick).
- Pour small circles of batter into warm skillet; saute/fry pancakes, flipping once, till both sides are golden brown.
- Serve with a side of lowfat sour cream, applesauce or possibly pineapple chunks in syrup.
