Homemade Graham Crackers

  1. For the dough:
  2. Add the flour, brown sugar, baking soda, and salt in a food processor.
  3. Pulse until mixed.
  4. Add the butter and olive oil and pulse until the mixture forms into a coarse meal.
  5. In a small bowl, add the honey, molasses, milk, and vanilla extract, and stir until well blended.
  6. Add to the flour mixture and pulse until the dough almonts comes together.
  7. It will be very soft and sticky.
  8. Turn the dough onto a lightly floured surface.
  9. Knead it together, and shape into a disc.
  10. Wrap it with a plastic wrap, then chill it until firm, 1 hour.
  11. To make the crackers:
  12. Cut the dough into two equal portions.
  13. Roll the dough onto a well oiled surface into a long rectangle about 18 inch thick.
  14. With a pizza wheel to cut the crackers, the size depends on your own preference.
  15. Place the crackers onto baking sheets.
  16. Pierce the crackers with a fork.
  17. Mix the sugar and cinnamon in a small bowl.
  18. Sprinkle the mixture over the crackers.
  19. Put into frige until firm, about 30 minutes.
  20. Place oven rack to upper and lower positions and preheat oven to 350F.
  21. Bake for 15 to 20 minutes, until browned and slightly puffed, rotating the baking sheets halfway through.
  22. Cool on the baking sheets for a few minutes.
  23. Place on wire rack and cool completely.
