Homemade Graham Crackers
- 1 cup flour, all-purpose
- 1 1/2 cups pastry flour, whole wheat or white whole wheat flour
- 1/2 cup brown sugar packed
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 3 tablespoons butter, unsalted cold and cut into small chunks
- 1/2 cup honey
- 1/4 cup molasses
- 1/4 cup milk plus 1 tablespoon
- 2 1/2 tablespoons vanilla extract
- 1 x sugar for sprinkling
- 1 x cinnamon for sprinkling
- For the dough:
- Add the flour, brown sugar, baking soda, and salt in a food processor.
- Pulse until mixed.
- Add the butter and olive oil and pulse until the mixture forms into a coarse meal.
- In a small bowl, add the honey, molasses, milk, and vanilla extract, and stir until well blended.
- Add to the flour mixture and pulse until the dough almonts comes together.
- It will be very soft and sticky.
- Turn the dough onto a lightly floured surface.
- Knead it together, and shape into a disc.
- Wrap it with a plastic wrap, then chill it until firm, 1 hour.
- To make the crackers:
- Cut the dough into two equal portions.
- Roll the dough onto a well oiled surface into a long rectangle about 18 inch thick.
- With a pizza wheel to cut the crackers, the size depends on your own preference.
- Place the crackers onto baking sheets.
- Pierce the crackers with a fork.
- Mix the sugar and cinnamon in a small bowl.
- Sprinkle the mixture over the crackers.
- Put into frige until firm, about 30 minutes.
- Place oven rack to upper and lower positions and preheat oven to 350F.
- Bake for 15 to 20 minutes, until browned and slightly puffed, rotating the baking sheets halfway through.
- Cool on the baking sheets for a few minutes.
- Place on wire rack and cool completely.
