Basque Chicken Recipe
- 8 fl ounce virgin extra virgin olive oil
- 2 sm Chickens, jointed
- 4 lrg Tomatoes, skinned and minced large
- 2 sm Green peppers, seeded and minced large
- 2 sm Red peppers, seeded and minced large
- 1 lrg Spanish onion
- 3 x Cloves garlic, peeled and sliced
- 1 tsp Paprika
- 8 fl ounce orange juice
- 8 x Black olives, unpitted
- 5 ounce Serrano ham, sliced thinly
- 1 x Glass dry white wine
- 2 ounce Brown rice Sea salt and black pepper
- Brown the chicken in the oil over a medium high flame and then add in the onions, peppers, rice, paprika and garlic.
- Add in tomatoes, ham and fluids and then cover and casserole for 45 min in a high sided saucepan over a low flame till the meat is cooked and the rice is soft.
- The gravy should have a thick consistency - not too runny and not stodgy.
