Basque Chicken Recipe

  1. Brown the chicken in the oil over a medium high flame and then add in the onions, peppers, rice, paprika and garlic.
  2. Add in tomatoes, ham and fluids and then cover and casserole for 45 min in a high sided saucepan over a low flame till the meat is cooked and the rice is soft.
  3. The gravy should have a thick consistency - not too runny and not stodgy.
