Summer Garden Medley Casserole

  1. Parboil potatoes and set aside.
  2. Place oil in large frying pan and fry onions and peppers for five minutes.
  3. Add water and remaining ingredients.
  4. Simmer for 20 minutes, stirring to combine well.
  5. Can be served alone or over rice or noodles.
  6. (Vegetarians can omit the meat).
