Baked Salmon with Honey Glazed Carrots
- 4 oz. salmon fillet or steak Walmart Supercenter 1 lb For $5.00 thru 02/14
- 2 Tbsp. orange juice
- 1/2 cup hot cooked instant brown rice
- 1 cup sliced frozen carrots, thawed Target 2 lb For $3.00 thru 02/06
- 1 Tbsp. KRAFT Balsamic Vinaigrette Dressing
- 2 tsp. honey
- 2 tsp. PLANTERS Pecan Halves, toasted
- 1 On-the-Go packet
- 1 bottle of water, 20 fl oz
- PREHEAT oven to 400F.
- Place salmon in a shallow baking dish lightly coated with cooking spray.
- Spoon orange juice over top.
- Bake salmon for 10 to 15 min., or until fish flakes easily with a fork, but is not too dry.
- PREPARE rice according to package directions.
- BRING carrots, dressing, and honey to boil in a saucepan.
- Reduce heat to medium-low; cover.
- Simmer for 15 min., or until tender.
- Sprinkle with pecans.
- COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
