BBQ Foil Pack Chicken
- 4 whole Boneless, Skinless Chicken Breasts
- 1/2 cups Prepared BBQ Sauce
- 8 slices Bacon
- 1 cup Shredded Cheddar Cheese
- Preheat oven to 350 F.
- Place the chicken breasts into a resealable plastic bag.
- Add BBQ sauce, seal the bag and shake to coat chicken breasts.
- Let them sit for 15 minutes while you cook the bacon.
- The bacon can also be cooked in advance when you are more pressed for time.
- Cook bacon in a large skillet set over medium heat.
- Once its crispy, remove skillet from the heat.
- Pull out 4 pieces of aluminum foil and set them on your work surface.
- Remove chicken breasts from the bag one at a time and place each one on a foil sheet and loosely wrap it.
- Place the foil packets on a baking sheet and bake for approximately 30 minutes.
- After 30 minutes, remove the baking sheet from oven and carefully open up the packets.
- Place 2 slices of bacon and a handfull of the cheddar cheese on each chicken breast and return to oven, leaving the foil open.
- The cheese will melt and the bacon will reheat (if you used premade bacon).
- I usually serve this with some rice and broccoli on the side.
