Microwave Quick Coffee Cake Recipe
- 2 c. biscuit mix
- 2 tbsp. sugar
- 1 carton (8 ounce.) lowfat sour cream
- 1 egg
- 1 tbsp. sugar
- 1/2 teaspoon cinnamon
- Combine all coffee cake ingredients except 1 tbsp.
- sugar and cinnamon.
- In medium mixing bowl mix well.
- Divide dough in half, spread half in 9 inch round glass baking dish.
- Sprinkle filling over top.
- Drop remaining dough by teaspoonfuls over filling.
- Filling will show through.
- Combine 1 tbsp.
- sugar and cinnamon, sprinkle on top.
- Microwave 10 min on medium simmer.
- Microwave 4 to 6 min on high or possibly till toothpick inserted near center comes out clean.
- Let stand 2 min.
