Summertime Couscous Salad
- 2 1/4 cup chicken broth or water
- 1 cup large couscous
- 1/2 tsp olive oil
- 1/2 tsp salt
- 1 can chick peas (drained)
- 3/4 cup diced green bell pepper
- 3/4 cup diced red bell pepper
- 1/4 cup red onion chopped
- 3 green onions chopped
- 1/2 cup cilantro chopped
- 1/2 tsp hot pepper flakes
- 1 Dressing
- 1 tsp honey
- 3 tsp olive oil
- 1 Juice of one large lemon
- 1 salt and pepper to taste
- Bring broth or water to a boil.
- Add couscous, olive oil and a dash of salt.
- Simmer 10-12 minutes.
- Turn off the heat when almost all the broth is gone.
- Cover with lid.
- Couscous will absorb all broth.
- Combine cooked couscous, chick peas, peppers, onion, green onions, cilantro and hot pepper flakes.
- Whisk together honey, olive oil, lemon and salt and pepper to taste combine with couscous mixture.
- Enjoy!
