Overfed Jalapeno Peppers

  1. Wash and cut the peppers on one side, lengthwise.
  2. Remove the seeds and membrane.
  3. Mix the cheese, bread crumbs and salt in a bowl.
  4. Hold a jalapeno over the bowl and stuff, stuff, stuff.
  5. You should have just enough cheese to fill them up.
  6. Seal the pepper with 2 toothpicks on both ends.
  7. Grill over medium heat until the skin is charred, about 10 minutes.
  8. An alternative is to wrap a piece of bacon or pancetta around each pepper for additional flavor.
