Overfed Jalapeno Peppers
- 4 whole Jalapeno Peppers
- 1 cup Chihuahua Cheese, At Room Temperature
- 1/4 cups Italian Bread Crumbs
- 1 pinch Kosher Salt
- Wash and cut the peppers on one side, lengthwise.
- Remove the seeds and membrane.
- Mix the cheese, bread crumbs and salt in a bowl.
- Hold a jalapeno over the bowl and stuff, stuff, stuff.
- You should have just enough cheese to fill them up.
- Seal the pepper with 2 toothpicks on both ends.
- Grill over medium heat until the skin is charred, about 10 minutes.
- An alternative is to wrap a piece of bacon or pancetta around each pepper for additional flavor.
