Sour Cream Streusel Coffee Cake

  1. HEAT oven to 350F Spray a 9-inch square or round baking pan with no-stick spray.
  2. MIX pancake mix, brown sugar, cinnamon, chopped nuts and butter for topping in a medium bowl until combined.
  3. COMBINE pancake mix, sugar and cinnamon for the batter.
  4. Add sour cream, oil and egg.
  5. Blend just until dry ingredients are moistened.
  6. Spread half the batter into prepared pan, sprinkle with half the topping mixture.
  7. Spread with remaining batter and sprinkle with remaining topping.
  8. BAKE for 30-35 minutes or until toothpick inserted in center comes out clean.
  9. Serve garnished with powdered sugar, if desired.
  10. TIP: High Altitude: Decrease sugar to 1/4 cup.
  11. Bake as directed above.
