Grilled Ginger Lamb Satays With Thai Sauce
- 1 1/2 lbs lamb steaks (cut in strips)
- 1 tablespoon ginger (chopped)
- 2 garlic cloves (minced)
- 1 tablespoon brown sugar
- 1 tablespoon fish sauce
- 3 teaspoons sesame oil
- 2 tablespoons lime juice
- 2 tablespoons sweet chili sauce
- 2 tablespoons coriander (chopped)
- 1 dried red chili pepper (seeded & finely chopped)
- 1 tablespoon sesame seeds (toasted-optional)
- jasmine rice (steamed)
- Combine lamb strips with gingr,garlic,sugar,fish sauce & sesame oil, refrigerate & marinate for 2-3 hours.
- Thread lamb onto 8 bamboo skewers that have been soaked for 30 minute.
- While lamb is in marinade, prepare dipping sauce.
- Combine lime juice, chili sauce,corinader & chill.
- Heat barbecue and cook skewers and cook for 3-4 minute on each side or until lamb is cooked.
- Serve sprinkled with toasted sesame seeds (optional) and dipping sauce and steamed jasmine rice.
