Apricot And Lamb Stew

  1. Heat oil and butter and brown meat cubes.
  2. Add onion, garlic and cinnamon and stir fry continuously.
  3. Add curry powder and turmeric and stir fry for 2 minutes.
  4. Season with salt and pepper.
  5. Add bay leaf, meat stock, jam and lemon juice.
  6. Reduce heat, cover and simmer until the meat is tender (about 1 hour).
  7. Add apricots and simmer for about 15 minutes.
  8. Remove bay leaf and serve with rice.
