Quick and Easy Simple Chicken Parmesan
- 4 each chicken breast halves, boneless, skinless
- 3 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup seasoned dry bread crumbs
- 1/2 cup parmesan, parmigiano-reggiano cheese, grated
- 8 ounces mozzarella cheese fresh
- 16 ounces spaghetti sauce
- 1 x salt and black pepper to taste
- Combine bread crumbs and parmesan cheese together on a large plate and mix well.
- Heat oil and butter in large oven safe skillet on stove top over medium-high heat until butter is melted and oil begins to shimmer.
- Season each chicken breast on both sides with salt and pepper.
- Dredge chicken in bread crumb and cheese mixture and lay carefully away from your body into the hot skillet.
- Cook chicken on one side until golden brown (about 4 to 5 minutes).
- Carefully turn chicken and continue cooking.
- Slice mozzarella into 1/2 inch thick slices, place on top of cooked chicken and spoon spaghetti sauce over top.
- Place pan in pre-heated 350F (180C) oven for 10 minutes or until cheese begins to melt and sauce is bubbly.
- Carefully remove from oven, serve alone or with a side of pasta and grated parmesan cheese.
