Soft Bread Basic
- 400 grams Bread Flour
- 100 grams All Purpose Flour
- 80 grams Sugar
- 7 grams Instant Yeast
- 2 grams Bread Improver (opt)
- 3 egg Yolks
- 270 grams Cold Fresh Milk (250 cc)
- 50 grams Butter
- 3 grams Salt
- 100 grams Evaporated Milk (80 cc) for brushing
- 50 grams Succade for sprinkling
- Mix all of the dry ingredients in a bowl.
- Place all of the ingredients (dry + egg yolks + milk) into mixer bowl.
- Mix until well blended.
- Add butter and salt.
- Continue mix until dough become smooth and elastic.
- (no dough on the sides of the bowl)
- Place dough onto floured surface.
- Cover and let rise until double in size.
- (1 hour)
- Divide dough into 60 grams each pieces.
- Rounded each pieces and put on floured tray.
- Let stand for 10 minutes.
- Gently deflate risen dough then shape it to your desire then let rise again for 30 minutes.
- Preheat oven 200AC for 10 minutes while brushing each dough with evaporated milk.
- Then bake it for 15 minutes until lightly brown.
