Better-than-Takeout Chicken Tikka Masala
- 1-1/2 lb. (675 g) boneless skinless chicken breasts, cut into bite-size pieces

- 1 tsp. ground coriander, divided
- 1 tsp. ground cumin, divided
- 1 tsp. red chili powder or cayenne pepper, divided
- 1 cup canned crushed tomatoes
- 1/3 cup Miracle Whip Original Spread Family Dollar $3.50 thru 02/07
- 1/4 cup water
- 1 Tbsp. oil
- 1/2 cup chopped onions
- 2 cloves garlic, chopped
- 1 tsp. minced gingerroot
- 1/2 tsp. cumin seed
- 2 Tbsp. chopped fresh coriander (cilantro)
- Combine chicken, 1 Tbsp.
- lemon juice and 1/2 tsp.
- each of the seasonings; set aside.
- Mix remaining seasonings, tomatoes, Miracle Whip and water in separate bowl.
- Heat oil in large skillet on medium-high heat.
- Add next 4 ingredients; cook and stir 3 min.
- or just until onions are crisp-tender.
- Add chicken; cook 2 min.
- or until chicken is lightly browned, stirring occasionally.
- Add tomato mixture; cook on medium heat 8 min.
- or until sauce is thickened and chicken is done, stirring frequently.
- Stir in remaining lemon juice and fresh coriander.
