Portuguese Caldo Verde

  1. Remove the large ribs of the kale and slice the leaves into very thin strips, as thin as possible.
  2. Place in a bowl of cold water for 1 hour.
  3. Drain well.
  4. In a 8 qt soup pot, saute the onions in the olive oil.
  5. Add the kale, chicken stock and remaining ingredients, including the drained beans.
  6. Simmer for 1 1/2 hours, covered.
  7. Taste for salt and pepper before serving.
