Rhubarb - Strawberry Upside Down Cake
- 5 cups rhubarb, finely cut
- 14 cup sugar
- 1 (3 ounce) package strawberry Jell-O gelatin dessert
- 1 (18 ounce) package white cake mix
- 3 egg whites (or as called for by your cake mix)
- 13 cup oil (or as called for by your cake mix)
- 1 13 cups water (or as called for by your cake mix)
- 16 ounces mini marshmallows
- Cover greased 9 x 13 pan with miniature marshmallows.
- Mix rhubarb, sugar and Jell-O.
- Let stand while preparing cake mix according to package directions.
- Pour cake mix over marshmallows, then cover with the rhubarb mixture.
- Bake at 350 degrees for 45 minutes.
- Turn onto serving dish.
- Cool and eat.
