Lemon Muffins

  1. Preheat oven at 400 degrees Fahrenheit, and line muffin batter with paper lined muffin cups or grease with cooking spray.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Beat in the yogurt and extracts.
  5. In a separate bowl, combine the flour, salt and baking soda.
  6. Add to creamed mixture just until moistened.
  7. Fill greased or paper-lined muffin cups three-fourths full.
  8. Bake at 400 for 18-20 minutes or until a toothpick inserted near the center comes out clean.
  9. While the batter is baking mix powdered sugar and lemon extract together.
  10. When the muffins are done drizzle it on top the muffin and DONE!!
