Stuffed Zucchini

  1. Cook zucchini in boiling salted water for 10 minutes.
  2. Let stand until cool.
  3. Cut in half lengthwise and carefully scoop out pulp.
  4. Mix pulp with onion, margarine, breadcrumbs, tomato, veal, sausage, salt, and pepper.
  5. Fill zucchini and place in a greased large casserole pan.
  6. Bake at 350 for 15 minute.
  7. Top with mozzarella and let stand for 10-15 minutes.
