Vegan White Cake
- 3 cups Unbleached Flour
- 2 cups Evaporated Cane Juice Or Sugar
- 2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1/2 cups Plus 2 Tablespoons Canola Oil
- 2 Tablespoons Apple Cider Vinegar, Scant
- 1 whole Vanilla Bean, Split, Seeds Scraped
- 2- 1/2 cups Water
- Preheat oven to 350 degrees F. Spray two 9-inch round cake pans.
- Mix together the flour, sugar, baking soda, and salt.
- In another bowl mix the oil, vinegar, vanilla bean seeds, and water with a mixer on low until combined.
- With the mixer on low, slowly add the dry ingredients to the wet and continue mixing until combined.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 25-30 minutes.
- Let cakes cool for 10 minutes in the pans before removing to a cooling rack.
- Top with your favorite frosting.
