Freds Peanut Butter Cookies
- 1 cup sweet butter, slightly softened
- 1 cup sugar
- 1 16-ounce box light-brown sugar
- 1 cup plus 1 tablespoon peanut butter
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups flour
- 1 tablespoon baking powder
- 1 cup semisweet chocolate chips
- Preheat oven to 350 degrees.
- Whip together the butter and sugars.
- Add the peanut butter and whip to combine completely.
- Continue beating while adding eggs and vanilla.
- In another bowl, combine the flour and baking powder.
- Use a fork to blend the flour mixture into the peanut-butter mixture.
- When fully combined, stir in the chips.
- Make balls about of an inch in diameter.
- Place on a nonstick baking sheet and with a fork press each ball down to create a crosshatch design.
- Bake for 10 minutes.
- Remove from the sheet immediately and cool on a rack.
