warm Bacon slaw
- 1/2 chopped red onion
- 3 slice chopped bacon
- 2 tbsp evoo
- 3/4 cup balsamic vinegar
- 2 oz whiskey
- 1/4 cup honey
- 1 polenta
- 1/4 cup chili paste
- 1 tbsp chopped garlic
- 1 head chopped red cabbage
- 1 sliced white onion
- heat EVOO in deep sided pan over low/med heat.
- add Bacon cook until starting to turn crispy.
- add garlic.
- add chopped onion.
- cook until onions are soft and Bacon is crispy.
- turn heat to low.
- add whiskey and vinegar.
- stir and turn heat to medium.
- add chili paste
- let dressing cook down until slightly thickened.
- add honey.
- stir occasionly.
- add salt and pepper to taste.
- turn heat off.
- add sliced onion and cabbage.
- stir to coat.
- serve warm on grilled polenta.
