Flounder Meuniere

  1. Sprinkle the flounder fillets with salt and pepper.
  2. (I cut each fillet in half).
  3. Evenly coat each side in flour.
  4. Heat oil in a frying pan and fry both sides of the fillets until golden brown.
  5. Turn up the heat to high, add the ingredients, cook briefly, then turn off the heat.
  6. Transfer to a serving dish and garnish with parsley to taste.
