Pecos Bean Soup Recipe
- 1 pound dry pinto beans
- 2 1/2 quarts. water
- 1/2 c. minced onion
- 1 clove garlic, chopped
- 1 lg. piece bacon rind
- 1 tbsp. chili pwdr
- 1/2 teaspoon oregano
- 14 ounce. can peeled, seeded, diced green chili peppers
- 2 teaspoon salt
- Wash beans and soak overnight in cool water; drain.
- Put beans in a large kettle.
- Add in 2 1/2 qts water and simmer 1 hour.
- Add in onion, garlic, bacon rind, chili pwdr, oregano and chili peppers.
- Cover and simmer 2 hrs, adding salt the last hour.
- Makes 6 servings.
