Chocolate Pie
- 1 (4 oz.) German sweet cooking chocolate
- 1/4 c. butter
- 2 eggs
- 1 1/2 c. sugar (white)
- 3 Tbsp. cornstarch
- 1/3 tsp. salt
- 1 (12 oz.) can evaporated milk
- 1 tsp. vanilla
- 1 (10-inch) deep pie shell (unbaked)
- 1 (3 1/2 oz.) can flaked coconut
- 1/2 c. chopped pecans
- Melt chocolate and butter.
- Cool.
- In medium bowl, beat eggs until light and fluffy.
- Add sugar, cornstarch and salt; beat until smooth.
- Blend in chocolate mixture.
- Gradually add evaporated milk and vanilla; mix until smooth.
- Pour into pie shell.
- Sprinkle with coconut and pecans.
- Bake in 350u0b0 oven for 50 to 60 minutes until top is puffed.
- If top browns too quickly, cover last 15 minutes with foil.
